  • Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. Add whipped topping; stir with wire whisk until well blended. Refrigerate 15 to 20 min. or until mixture is very thick and will mound.
  • Spoon into crust.
  • Refrigerate at least 4 hours or overnight until firm. Store leftover pie in refrigerator.

Special Extra

Stir in 1 cup chopped or sliced fresh fruit along with the whipped topping. Do not use fresh pineapple or kiwi, however, since these fruits contain an enzyme that prevents the gelatin from setting.


Prepare as directed, using JELL-O Strawberry Daiquiri or Pina Colada Flavor Gelatin.

I tried this recipe using the strawberry daiquiri flavor gelatin, garnishing the top with sliced strawberries. I also made it with the pina colada flavor gelatin, garnishing the top with grated chocolate (for color) and coconut flakes. My Cinco de Mayo guests all greatly enjoyed it. Best of all, it was really easy to make!

Rated 1 out of 5 by from Bland. Bland. I had to freeze this to make it thicken up. It may have been because I used fat free cool whip, but I would not make this again. Stick to a regular margarita pie recipe- it's more work but at least it's worth eating!
