  • Heat oven to 375ºF.
  • Mix meat, stuffing mix, tomatoes, 1-1/4 cups cheese, 3/4 cup salsa, eggs and garlic until blended. Shape into 2 loaves in 13x9-inch baking dish.
  • Bake 50 min. Meanwhile, mix remaining salsa and sugar.
  • Spread salsa mixture over meatloaves; top with remaining cheese. Bake 10 min. or until meatloaves are done (160ºF).

    I have made this twice thus far, the first time I followed it to the "T". It was good, but seemed to be missing something. The second time around, I added my own peppers, spices and it turned out great. My family loves spicy food and served with Spanish rice it was the perfect combo. Kids **** hearing the word "meatloaf" when it comes to dinner; however this one is the one they love to hear.

    I only make this Mexican Meatloaf now instead of the traditional meatloaf. We love it and it is delicious.

    Followed the recipe exactly (using Rotel for the tomatoes)...absolutely delicious! Was worried that only 2 eggs would not be enough for holding the loaves together, but they did! Almost made one large 'loaf', but now glad that I made 2 as the recipe called for, as they were cooked perfectly even throughout. Will repeat this recipe!
