  • Beat eggs, milk and mustard in large bowl with wire whisk until well blended. Add remaining ingredients; stir gently to mix well.
  • Pour into lightly greased 12x8-inch baking dish; cover. Refrigerate several hours or overnight.
  • Preheat oven to 325°F. Uncover baking dish. Bake 45 to 50 min. or until knife inserted in center comes out clean.

Serving Suggestion

For a delightful brunch idea, serve with a seasonal fruit salad.

Special Extra

Add 1 can (4 oz.) chopped green chilies, drained, to the egg mixture before pouring into baking dish.

Substitute

Prepare as directed, using KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese and OSCAR MAYER 96% Fat Free Ham.

I would make this receipe again, but I did leave a few things out that I probably wouldn't again. I didn't use the ham or the bacon so that this would be a meatless dish. There was a little more liquid than expected at the bottom of the dish, but this was still good. It just seemed like it needed a little more flavor or kick. I also used whole-wheat bread, part-skim moz cheese and fat-free milk as subsitutes. I would the egg-souffle touch that you get from this dish.

I've been making this for years (doubled) also known as egg souffle ... 2 layers of bread cheese and sausage and just the egg mixture without peppers or mushrooms. Top with curshed corn flakes ... bake one hour in a 9x13 pan ... the kids like it so much that they know make it for me -- thanskgiving, Christmas, new years and easter ... I'm sure it will be a family tradition for generations!

When I doubled the recipe (for 25 people), the red peppers were too strong and the flavor was not as good as the original size recipe. I think I will only put half as much red peppers next time. I love the fact though that I can prepare it the day before. Not many recipes have that option especially for a large brunch-at least that I have found.

I am sure it would be very good reheated in the microwave for a short period of time if there were leftovers. I am a vegetarian so I would leave out the meat but would add marianated artichoke hearts, sun dried tomatoes and maybe a few different mushrooms.

Rated 5 out of 5 by from I made this for an open house. I made this for an open house. Everybody loved it and wanted the recipe. I didn't put any mushrooms in and used double the ham (Canadian Ham). So easy to make, however it took longer than 10 min to prepare, more like 30 min. Loved the fact that I could make it the night before and than just pop it in the oven.

It's easy because you do most of the work the night before, all you have to do is get up and put it in the oven. It made getting everyone ready for church much less hectic. I also made it with sausage instead the other meats and it was wonderful!

I also use hash browns, tater tots fresh potato diced small. I make this for our work group as most people at the office rush out the door without a proper brkfst. I always bring home an empty plate with this recipe.

I also used fatfree milk. It worked very well and was very tasty. This is the main recipe I use for company. Most of my family and friends need to lower cholesterol and fat, so this recipe meets all of our needs.
