  • Heat oven to 350°F.
  • Whisk eggs and water in medium bowl until blended. Reserve 1/2 cup cheese. Add remaining cheese to eggs along with tomatoes, basil and bacon; mix well.
  • Pour into 9-inch pie plate sprayed with cooking spray; sprinkle with reserved cheese.
  • Bake 30 min. or until knife inserted in center comes out clean, and top is puffed and golden brown.

    Eggcellent flavor profile but it should be a crime to **** an egg recipe without salt and pepper. I distribute ingredients evenly in 12 cup muffin pan and top with egg mixture. Makes a quick, low carb breakfast throughout the week.

    My husband and daughter loved this but I changed some things. I added 2 more eggs and did 2 Tbsp of rotel juice instead of water and put in a can of drained rotel instead of the tomatoes and added ham slivers to it as well and added whole package of cheese and cooked for 60 minutes instead. It turned out great! Next time I'm going to add mushrooms too bec/ we love those too. But my daughters had thirds of this dish and she's only 3 years old. She was able to help make it too bec/ it was so quick and easy.
