Whole family loved it!! I an old school and I make my own pierogis from scratch which takes a LONG time and a lot of work. This is a quick and easy way to get the same great taste. I didn't use the bacon or green onion on top (since usually not inside) and I made extra onions to put on top when I served. Delicious!
I love the fact that you called it "pierogi" which is plural and not pierogis. Pierog is singular. Kielbasa is also correct, not kielbasi. I am Polish so that is correct for us. Don't know of other languages. ANYWAY, this is a great recipe as to make pierogi takes hours. To make cheese pierogi we used dry cottage cheese, mashed, but it is almost impossible to find anymore. I rinse and drain cottage cheese and mix into the potatoes and will try that the next time I make this *********. Thanks!
