  • Heat oven to 350°F.
  • Melt 1/2 cup butter; pour into large mixer bowl. Add cake mix, pineapple, coconut and eggs; beat until blended. Stir in 1/2 cup nuts.
  • Pour into 13x9-inch pan sprayed with cooking spray.
  • Bake 25 to 30 min. or until toothpick inserted in center comes out clean. Cool.
  • Beat cream cheese, sugar and remaining butter in medium bowl with mixer until blended; spread onto cake. Sprinkle with remaining nuts.

Variation

The cake literally fell apart in a mess of crumbs. It would not hold together. I suppose we will put it in a bowl with ice cream to enjoy it!

Rated 3 out of 5 by from Tasted great, but not moist enough This cake sounded great and the recipe interesting. It was just too dry, the batter was as thick as biscuit dough. I don’t know if there are more than one type of BC spice cake. I think it would be great to throw in a banana and abouta half cup of water!
