  • Heat oven to 400ºF.
  • Prick potatoes in several places with fork. Microwave on HIGH 8 to 9 min. or until tender.
  • Cut potatoes lengthwise in half. Scoop flesh into bowl, leaving thin shells; mash potato flesh with cream cheese spread, sour cream and 1/4 cup cheddar. Spoon into potato shells; sprinkle with remaining cheddar.
  • Bake 10 min. or until cheese is melted and potatoes are heated through.

Serving Suggestion

Serve with a bowl of broth-based vegetable soup and some sliced fruit for an easy weekday meal.

The potato is initially cooked in the microwave and after stuffing is finished in the 400 degree oven. Hope this helps clariy that.

It's easy & quick and you can top it with anything you'd put on a regular baked potato. I used chili, cheese and sour cream on mine. Delicious!

After scooping out the potatoes, I mashed as I would regular mashed potatoes with a little butter and milk. I also added real bacon bits to the potatoes before spooning back into their shells.
