  • Heat oven to 375°F.
  • Toss carrots with 1/4 cup dressing in 13x9-inch baking dish; spread onto bottom of dish. Bake 15 min.; stir. Top with fish.
  • Combine tomatoes and remaining dressing; spoon over fish. Bake 15 min. or until fish flakes easily with fork. Meanwhile, cook rice as directed on package.
  • Serve fish and carrots over rice; top with tomato mixture.

I make the carrots separately by boiling them in chicken broth because my children like a softer consistancy. The carrot slices in the recipe come out al dente. My husband likes the fish with the tomatoes scraped off because he thinks they are too sweet. The fish has a nice flavor from being cooked with the dressing and tomatoes and is very moist and tender.

I used this recipe for inspiration for one of me and my husbands at-home "date nights". We're not super big on carrots, so i didn't use those. But instead I stir fried some peppers, onions, snap peas, and mushrooms with a little bit of regular Italian dressing (couldn't find the dressing the recipe calls for) and served the salmon on a bed of rice and the veggies and a glass of wine. It turned out fantastic!!

I don't eat seafood regularly, so I was hesitant to try it. It was great! A smart start to the New Year for those with a weight loss goal. Be sure to cook the carrots to your liking. Also consider purchasing your salmon from an upscale market to ensure it's freshness. The fresher the fish, the less odor in your kitchen.

This was easy for me to make for him because it's not a fishy fish and it's such an easy recipe! He inhaled it and has already asked me to make it again! This dish could use more tomatoes and even a little basil to flavor it up a little.

We had brown rice to accompany it. Really good! My hubby says its a keeper. I'll be making this again! Thanks!

The fish was very good, although it did take a little longer - by about 3 minutes - than advertized. The carrots came out al dente, which we liked and which we assume was intended.

I was concerned that the carrots would still be hard when the Salmon was done. It came out great, the Salmon was nice and moist. The tomatoes had a nice flavor.

Rated 4 out of 5 by from We loved this dish! We loved this dish! My husband usually puts ketchup on my delicious grilled salmon, but he said this was flavorful enough to eat without it. The overall cooking time did take a little longer than the recipe said, but it was great.
