  • Heat oil in nonstick skillet on medium-high heat. Add zucchini; cook 1 min. Add shrimp; cook 8 to 10 min. or until shrimp turn pink, stirring occasionally.
  • Stir in tomatoes and dressing; cook on low heat 3 to 4 min. or until heated through. Top with cheese.
  • Spoon over rice.

I did make a few changes-I had a frozen vegetable mix that had zuchinni,yellow squash,and green beans,so I added 2 cups in place of the fresh vegetables. And we did add more of the dressing than the recipe called for. We definitely will make this again!

Rated 4 out of 5 by from Very good! Very good! I made my husbands with shrimp, and since I don't eat seafood I made another one without shrimp. I also added onions to mine. I added a little salt and pepper for seasoning, but other than that I was VERY pleased with this dish. I look forward to making it again in the near future.

Rated 5 out of 5 by from WONDERFUL! WONDERFUL! Absolutely amazing! I doubled the recipe and used half of the feta. Every time my dad walks through the living room now he feels the need to tell me how delicious it was. If you're a shrimp lover (and who isnt?) you've GOT to try this!

This was so good - also added some garlic, red pepper flakes and a small amount of spagetti sauce. Taste was fantastic - served over thin spagetti - warm crusty bread on the side.
