  • Beat eggs, milk and mustard with whisk until well blended; pour over potato mixture. Cover; cook on low heat 8 min. or until center is set.
  • Top with cheese; cook, covered, 1 to 2 min. or until melted.

Rated 5 out of 5 by from AWESOME! AWESOME!! Cooks pretty quick, which is nice for getting the cassorole effect without the hour in the oven. And you will have some leftover ingredients (hashbrowns and smokies) to make it again. I also used more than 4 smokies. My Hubbie doesn't like cassoroles with veggies or onions but he LOVES this one(he's a meat and potatoes kind of guy;-)

Rated 4 out of 5 by from This was a quick and easy breakfast to make. This was a quick and easy breakfast to make. My 13-year-old daughter helped me make this and everyone loved it. We added more Little Smokies when we made it- four didn't seem like enough. It was difficult to clean the skillet afterwards, but it could have been the pan I was using. Of course the daughter did not help with the clean-up ! :)

It's very easy and really tasty. I've made it several times now for my own family and even serve it as dinner. I used cut up Thuringer Sausages mixed in with the potatoes and then topped with the cheese and egg. YUMMY!

It was good but definitely need to add some additional seasoning because it was a little bland at first taste. I added salt. Also used more lil smokies. I used frozen O'brien hashbrowns that has onion and green pepper in the mix. My family enjoyed it and they don't usually go for new recipes.

I read the comments before I made it and saw that others thought it was bland, so I added 1/2 dijon mustard and 1/2 reg, hot pepper sauce, chili powder and seasoned salt to the milk mix. It was tasty. I also added corn to the hash brown mix.

I also added bell peppers, some onion, and garlic. this was awesome and my hubby loved it which is amazing since he is a very picky eater.

I used bacon instead of the smokies, potatoes o'brien and spicy brown mustard. My husband loved it and couldn't stop raving about! Winner!
