  • Cook chicken in hot oil in large skillet on medium heat 8 min. or until chicken is browned on all sides, turning occasionally. Remove from skillet. Drain skillet, reserving 1 Tbsp. drippings in skillet.
  • Add onions to skillet; cook and stir 1 min. Return chicken to skillet; add tomatoes. Cover. Simmer on low heat 25 min. or until chicken is done (165ºF).
  • Top with cheese and parsley.

Serving Suggestion

Serve with a mixed green salad and piece of your favorite fresh fruit.

Special Extra

Serve over hot cooked rice.

Instead of doing this in a skillet I did it in the oven, I sprayed the pan with pam, placed the chicken down, poured the tomatoes and sliced onion on top baked in the oven till the chicken was done, crumbled on the cheese let it melt and served! I served this with the (green beans and tomatoe Italian and the creamy cauliflower). Got rave reviews from the dinner party!

The feta cheese gives the right taste and adds a creaminess as well. A real yummy dinner. I also add chicken broth (reduced sodium) for added flavor.

Rated 5 out of 5 by from this was very good! this was very good! i changed it just a little.. i mixed the feta with roasted red pepper vinagrette and garlic. added extra feta and parsley along with the peppers once it was out of the oven. It's a keeper!!!
