BEAT cream cheese and vanilla in large bowl with mixer until well blended.
ADD boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Add cold water; stir until slightly thickened. Gradually add to cream cheese mixture, beating after each addition until well blended. Gently stir in berries and 1-1/2 cups COOL WHIP.
SPOON into 10 dessert dishes. Refrigerate 1 hour or until firm. Serve topped with remaining COOL WHIP.
