  • Heat oven to 400°F.
  • Toss shrimp with 2 Tbsp. dressing in medium bowl. Refrigerate 10 min. Meanwhile, mix remaining dressing with remaining ingredients.
  • Remove shrimp from dressing; discard dressing. Partially split each shrimp lengthwise by making long cut along underside of shrimp, being careful to not cut all the way through shrimp. Open shrimp slightly; place, cut sides up, in shallow baking dish. Top with crumb mixture.
  • Bake 7 to 8 min. or until shrimp turn pink.

Assemble recipe as directed. Refrigerate up to 10 hours. When ready to serve, bake as directed.

Rated 5 out of 5 by from A great and Easy Appetizer to make. A great and Easy Appetizer to make. I butterfly cut the shrimp, so the shrimp looks larger and put a dollap size of stuffing on top. It browned nicely. i didn't have parsley or parmesean cheese, so i substitued w/ cilantro and mozzarella. just as yummy. i am having a party for 20 next week. plan to make it again. Another thing, get the kids involved by having them crush the crackers in a ziploc bag, while you cut the shrimp and get the other ingredients ready. This is a fast, easy, and delicious appetizer.

Rated 5 out of 5 by from I really liked this recipe a lot. I really liked this recipe a lot. I usually stay away from recipes with stuffings. This was so simple, easy and quick. It was very delicious. I really enjoyed it a lot. It also kept in line with my points from weight watchers. I can enjoy such good food and not feel guilty. I am considering making this for our next holiday party as an appetizer. I like that I can make it ahead of time also.

I just used the stuffing mixture as a topping and baked them in the oven. We loved them. Next time I will use shrimp, and I am sure they will be just as impressive. This is a simple recipe that makes the cook look really good.

It was delicious! Also a time saver, I used frozen pre-cooked shrimp and let them defrost under cold water. It was less time in the oven then.

Rated 5 out of 5 by from I Made these as an appetizer, and Fabu-lo-so! I Made these as an appetizer, and Fabu-lo-so! I didn't have fresh parsley so I used 1/2 dry parsley and 1/2 fresh Cilantro! I was also able to stuff the little shrimp that I had (i didn't have the same size as the recipe)

Rated 5 out of 5 by from Delicious & easy! Delicious & easy! I doubled this recipe since I had a 1 lb. bag of extra jumbo shrimp. I also added 1 finely chopped stick of artificial crab meat to the stuffing (about 1/8 of a cup). My family really enjoyed it.

Rated 5 out of 5 by from Incredibly easy, and so good! Incredibly easy, and so good! I used 2T. Italian Dressing with the cracker mixture and marinated the shrimp in 1T. of the dressing, so the cracker mixture would stick together a little better on the shrimp.
