  • Heat oven to 350ºF.
  • Heat oil in medium skillet on medium-high heat. Add mushrooms; cook 4 min. or until tender, stirring occasionally. Beat eggs, milk and mayo in large bowl with whisk until blended. Stir in stuffing mix.
  • Spoon into 9-inch square baking dish sprayed with cooking spray; top with mushrooms, tomatoes and onions.
  • Bake 35 min. Sprinkle with cheese; bake 15 min. or until center is set and cheese is melted. Let stand 10 min. before serving.

Save 60 calories and 8g fat, including 2.5g sat fat, per serving by preparing with KRAFT Light Mayo Reduced Fat Mayonnaise and KRAFT 2% Milk Shredded Cheddar Cheese, and substituting 1-1/2 cups cholesterol-free egg product for the 6 eggs.

Make Ahead

Cover unbaked casserole tightly with plastic wrap; freeze until solid. Cover with foil. Freeze up to 3 months. When ready to serve, heat oven to 350ºF. Remove foil and plastic wrap. Discard plastic wrap. Re-cover casserole with foil. Bake 1 hour. Remove foil; sprinkle casserole with cheese. Bake, uncovered, 15 min. or until center is set and cheese is melted. Let stand 10 min. before serving. To decrease the baking time, thaw casserole in refrigerator overnight, then bake, uncovered, 40 min. or until center is set and cheese is melted.

Special Extra

Sprinkle egg mixture with cooked and crumbled OSCAR MAYER Bacon along with the mushrooms, tomatoes and onions.

Since we're not great mushroom fans I sauteed chopped sweet onion and green papers in the oil instead of the mushrooms. I also chopped chicken and added it to the onion-green pepper mixture. Followed the rest of the recipe except the only Stove Stove I had on hand was the Stove Top Cornbread Stuffing Mix. It worked great and tasted great. I sprinkled the green onions and added the tomatoes and cheese the last 15 minutes. My husband found it delicious. That's what you like to hear! Thanks for your great Food & Family Magazine. Love trying new recipes.

Rated 5 out of 5 by from The BEST recipe I've made from Kraft! The BEST recipe I've made from Kraft! I wish I had made a ton of it, or shared with my mom! Yes, it's that good. The only changes I made were to add diced ham before adding the stuffing, and chopping the tomatoes instead of slices, and baking for 40 minutes. Like the title, sooooooooooooo easy, and soooooooooooo delicious! I'll be making this quite often, and making a lot of it!

I use often use the stuffing mix for pork and prepare it according to package directions in the microwave, then let it cool slightly and press it into the pan as a crust. I've used sausage, ham, bacon, spinach, swiss cheese, cheddar, mushrooms. salsa, o'brien potatoes, it's all good.

Cut it back by an egg and used less mayo for an 8X8" pan, and it worked quite well - actually needed less time to cook. Used the crumbled bacon to doctor it up a bit, and was very pleased with the flavors together. This is a future staple at our house!

I made it exactly to the recipe. I was looking for a healthy breakfast alternative to pop tarts lol. Love a million other recipes on this site though.

I've made it a few times now for play dates with fellow mommies and they all rave about how delicious this egg bake is. The stove top stuffing really gives it a unique flavor that's hard to resist!

I mixed canned mushrooms into the stuffing mixture instead of using fresh mushrooms. I also used canned tomatoes on top. This is a very versatile recipe you can pretty much add what you like!

Rated 5 out of 5 by from Very good! Very good! Used the lower sodium stuffing mix as well as some other suggestions of adding turkey sausage, red pepper and seasonings (used italian seasoning). Also drained a canned of no salt added diced tomatoes instead of using fresh.
