  • Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 4 minutes or until cooked through.
  • Add vegetables, pineapple with juice and sweet and sour sauce; mix well. Stir in water. Bring to boil.
  • Stir in rice; cover. Reduce heat to medium-low; simmer 5 minutes. Remove from heat. Let stand 5 minutes or until almost all of the liquid is absorbed and rice is tender.

Make it Easy

Substitute 1 pkg. (10 oz.) frozen BOCA Meatless Chik'n Nuggets for the cut-up fresh chicken. Cook and stir in the hot oil in large skillet 7 to 8 minutes or until nuggets are crisp and heated through. Remove from skillet; cover to keep warm. Continue as directed, adding the nuggets to the cooked vegetable mixture along with the rice.

Rated 5 out of 5 by from I would definitely make this recipe again. I would definitely make this recipe again. The only thing I did differently was to use fresh veggies. I cut up red and green peppers and carrots and it probably made it a bit better. I also cooked it in the water a bit longer before adding the rice so the veggies could get softer. This one's a keeper. I may try adding a bit of "hot" to it next time, like red peppers or chillis to see how it conteracts all the sweet!

Rated 4 out of 5 by from I made this for my family (boyfriend, child and myself). I made this for my family (boyfriend, child and myself). Boyfriend loved it! Son wasn't to fond of this. And myself something I would have to get use to. I followed all the directions, and needed to add a extra cup of water due to rice wasn't cooked all the way and still hard so then I added that extra cup of water. GREAT WOULD MAKE IT AGAIN!

The only thing I changed is that I didn't cook the rice with the chicken. I tried it once and it just didnt' work well. I also add a lot more pinapple pieces. But overall this recipe is made often in my house!
