  • Dissolve coffee granules in hot water. Gradually add to cream cheese in medium bowl, beating with whisk until blended. Add sugar; mix well. Stir in the whipped topping.
  • Place 16 of the wafers on bottom of 8-inch square dish; cover with half of the whipped topping mixture. Repeat layers; cover. Refrigerate several hours or overnight.
  • Top with raspberries just before serving. Sprinkle with cocoa powder and grated chocolate. Store leftovers in refrigerator.

Rated 4 out of 5 by from this was easy to make and tasty. this was easy to make and tasty. I am not a "measurer" so i just eyeballed it. I did add about 1 cup of powedered sugar-some people said to taste it and add to your taste, but it tastes bitter b/c of the coffee. maybe adding a bit of sugar to the coffee might help. otherwise this was really good. also stick to the brand name when dealing with the vanilla wafers. there are imitation cookies available, but this particular brand should be used when making this recipe. this is a tasty dessert and i would definetly make it again-the more layers the better i think.

Rated 4 out of 5 by from I loved this recipe! I loved this recipe!! I made it with the 1/3 less fat cream cheese, lite Cool Whip and reduced fat Nilla wafers to cut down calories and fat. I did not have instant coffee, so I used coffee left from earlier in the day. Very tasty...I will definitely make it again.

Rated 5 out of 5 by from I love this recipe. I love this recipe. Easy to make and yummy. My hubby is not the biggest coffee fan so I used freshly brewed coffee , let it cool some added a touch of milk and vanilla to cut the coffee taste some. He loved it. A keeper!

I had made an extra for us to eat the next day but our guests took that with them as well. Beautiful presentation. I used low fat cream cheese and was still delicious. The reason I am giving four star is because I had to use more wafers than the recipe called for otherwise I was left with too much cream cheese mix.

Rated 5 out of 5 by from I adore this recipe! I adore this recipe! I changed a few things... I added 1 cup of cocoa, 1/2 c to 3/4 c of powered sugar till it tasted just right. I also used the light Cool Whip topping. Instead of the Nilla Wafers I used graham crackers. My guests raved about this dessert and they all wanted the recipe. My husband who hates anything chocolate loved it.

I used regular coffee (1 tbsp soaked in 2 tbsp of water and drained the grounds off since I did not have instant and I used Lite Cool Whip)An absolute keeper!

Mine came out a little flat because I used a different size pan (7"x10"), but that was the only down side. I made it the "healthier" way and added a pinch of vanilla extract. I received so many compliments on it. I will definitely make it again.

Rated 4 out of 5 by from Great dessert. Great dessert. I substituted Cool Whip Free and Low Fat Cream Cheese and it still tasted great. I recommend putting it in the freezer for about 1/2 hour before cutting though. Even after spending all night in the fridge it was very soft.
