Easy Vegetable Soup

This easy-to-make vegetable soup can be made with your choice of beef or chicken broth. No matter which you choose you'll get rave reviews.

8 servings, about 1 cup soup and 5 crackers each

What You Need

1/2
cup  chopped onion
2
tsp.  margarine or butter
1
qt.  (4 cups) chicken broth
2
medium  carrots, peeled, sliced and halved (about 1 cup)
2
medium  potatoes, peeled, chopped
1
cup  cut green beans
1
Tbsp.  chopped fresh parsley
1
tsp.  dried tarragon leaves
1/4
tsp.  ground black pepper
 Saltine crackers

Make It

COOK onion in margarine in large saucepan on medium-high heat until tender.

ADD chicken broth, carrots, potatoes, green beans, parsley, tarragon and pepper.

BRING to boil. Reduce heat to medium-low; simmer 20 min. or until vegetables are tender. Serve hot with crackers.
