  • Combine baking mix, dry pudding mix and cinnamon; set aside. Beat butter and sugar in large bowl with mixer until light and fluffy. Beat in eggs and milk until blended. Add baking mix mixture; beat on low speed until blended. Stir in zucchini.
  • Pour into 9x5-inch loaf pan sprayed with cooking spray.
  • Bake 45 min. or until toothpick inserted in center comes out clean. Cool in pan 10 min. Remove from pan to wire rack; cool completely.
