  • Heat oven to 350°F.
  • Microwave butter in microwaveable 9-inch pie plate on HIGH 30 sec. or until melted. Add potatoes; stir gently. Microwave 10 min.
  • Whisk eggs, milk and pepper in medium bowl until blended. Stir in pepper Jack cheese; spoon over potatoes.
  • Bake 20 min. or until knife inserted in center comes out clean. Sprinkle with cheddar; bake 3 to 5 min. or until melted. Sprinkle with bacon.

Rated 5 out of 5 by from Family Favorite! I have been making this recipe for nearly 20 years and it is a hit when made exactly as written. But I have a few suggestions that I have incorporated over the years: First, I have cut the butter in half (to 1.5 tablespoons). 10 minutes is too long to microwave the potatoes. Try 4-5 minutes. This is dependent up on power of your microwave so adjust accordingly After you remove from the microwave, sprinkle the pepper-jack cheese onto the potatoes and press down lightly. Then pour the egg mixture over it. This allows for more even distribution of the cheese .If you don't have pepper-jack cheese you can substitute Monterey Jack cheese (or any cheese) and 1/2 tsp dried crushed red pepper. You can also add finely chopped fresh veggies or substitute ham or sausage for the bacon. You can double this and put in a 9x13 casserole dish. This will increase the cooking time. The variations are endless.

Rated 5 out of 5 by from Tasty I just made this recipe substituting frozen tater tots for the Potatoes O'Brien and added green and red peppers and red onion. I used only 4 eggs. It took about 40 minutes to bake. At the 20 minute mark the eggs were still runny or maybe it was the water from the frozen hash browns. Next time I'll use refrigerated hash browns. Anyway, this turned out tasty and satisfying, even the kids loved it!
