Serve your family this simple morning skillet on a special weekend.
Add chopped leftover tomatoes or cooked broccoli to the potato mixture. Also, this is a great use for leftover cooked potatoes. If using cooked potatoes, just chop and cook with the peppers and onions until heated through.
Instead of cubing and cooking the potatoes yourself, use 1 pkg. (1 lb. 4 oz.) frozen hash browns. Add to skillet after cooking peppers and onions; cook until heated through. Continue as directed.
Scramble the eggs before adding to skillet. Do not make wells in potato mixture; spoon scrambled eggs over potato mixture in skillet. Top with bacon and cheese, then continue as directed.
Serve with TACO BELL® Thick & Chunky Salsa.
