"Egg-stra" Special Skillet Dish recipe

One skillet and six ingredients make a dish so tasty, it's gone before you can even tell 'em to come and get it. Now that's egg-stra special.

What You Need

lb.  potatoes (about 3), peeled, cubed
slices  OSCAR MAYER Bacon, chopped
small  onion, chopped
cup  chopped red peppers
cup  KRAFT Shredded Cheddar Cheese

Make It

COOK potatoes in boiling water 5 min.; drain well.

COOK bacon in large nonstick skillet on medium-high heat until crisp, stirring occasionally. Remove from skillet; drain on paper towels. Wipe out skillet with additional paper towel. Add onions and peppers to skillet; cook and stir on medium heat 3 min. Add potatoes; cook 10 min., stirring occasionally.

MAKE 6 small wells in potato mixture. Crack 1 egg into each well; top with bacon and cheese. Cover; cook 5 to 8 min. or until eggs are set.

Creative Leftovers
Add chopped leftover tomatoes or cooked broccoli to the potato mixture. Also, this is a great use for leftover cooked potatoes. If using cooked potatoes, just chop and cook with the peppers and onions until heated through.
Instead of cubing and cooking the potatoes yourself, use 1 pkg. (1 lb. 4 oz.) frozen hash browns. Add to skillet after cooking peppers and onions; cook until heated through. Continue as directed.
