  • Cook potatoes in boiling water 5 min.; drain well.
  • Cook bacon in large nonstick skillet on medium-high heat until crisp, stirring occasionally. Remove from skillet; drain on paper towels. Wipe out skillet with additional paper towel. Add onions and peppers to skillet; cook and stir on medium heat 3 min. Add potatoes; cook 10 min., stirring occasionally.
  • Make 6 small wells in potato mixture. Crack 1 egg into each well; top with bacon and cheese. Cover; cook 5 to 8 min. or until eggs are set.

Creative Leftovers

Add chopped leftover tomatoes or cooked broccoli to the potato mixture. Also, this is a great use for leftover cooked potatoes. If using cooked potatoes, just chop and cook with the peppers and onions until heated through.

Shortcut

Instead of cubing and cooking the potatoes yourself, use 1 pkg. (1 lb. 4 oz.) frozen hash browns. Add to skillet after cooking peppers and onions; cook until heated through. Continue as directed.

    Easy and good. The whole family liked it. I used turkey bacon so I had to add some oil to the skillet with the veggies. the potatoes stuck to the pan a bit.

    This was delicious 7 so easy! We had this for dinner as a spur of the moment meal & it was perfect for that. I cooked the potatoes while I prepped the pepper & onion & cooked the bacon in the microwave. When the potatoes were done, I chopped them & moved forward w/ the recipe then finished browning the bacon in the pan & boiled the potatoes in. Very good!
