what you need

1/3

cup sugar

Tbsp. MINUTE Tapioca

cups 2% reduced fat milk

egg, well beaten

1/2

tsp. rum extract

1/8

tsp. ground nutmeg

Make It

MIX sugar, tapioca, milk and egg in medium saucepan. Let stand 5 minutes.

COOK on medium heat until mixture comes to full boil, stirring constantly. (Pudding thickens as it cools.) Remove from heat.

STIR in rum extract and nutmeg. Cool 20 minutes; stir. Serve warm or chilled.

I really enjoyed this recipe. I served it with a dob of Cool Whip and a cherry. Next time I make it I will sweeten it with Splenda.

I found this a little disappointing. Ilove both eggnog and tapioca but this didn't seem to do it for me.

This is so easy to make! My husband and I really enjoy it served cold. Also, I have doubled the rum flavoring and nutmeg amouts with very good results.

This is so yummy. I used the recipe but substituted rice the 2nd time. Try it...it is so good!

I will try this it looks yummy. I will use Splenda instead of sugar as I am a diabetic.

Quick and easy to prepare. Tastes delicious with honey as a topping if you have a sweet tooth.

Yummy! I use Equal to sweeten this - my husband is a diabetic. Just cook the pudding as directed without the sugar and add the Equal when you add the rum extract and nutmeg.
