  • Mix sugar, tapioca, milk and egg in medium saucepan. Let stand 5 minutes.
  • Cook on medium heat until mixture comes to full boil, stirring constantly. (Pudding thickens as it cools.) Remove from heat.
  • Stir in rum extract and nutmeg. Cool 20 minutes; stir. Serve warm or chilled.

Special Extra

Sprinkle each serving with ground nutmeg.

    My family likes tapioca pudding every chance they can get. I thought I'd give this recipe a try, just for something different. We were pleasantly surprised to find that we have a new favorite.

    I really enjoyed this recipe. I served it with a dob of Cool Whip and a cherry. Next time I make it I will sweeten it with Splenda.
