  • Whisk egg and milk in medium saucepan until blended. Stir in sugar and tapioca. Let stand 5 min.
  • Bring to full rolling boil on medium heat, stirring constantly. (Pudding will be thin. It thickens as it cools.) Remove from heat.
  • Stir in rum extract and nutmeg. Cool 20 min.; stir.

Special Extra

Garnish each serving with a light sprinkle of additional ground nutmeg.

Rated 5 out of 5 by from Yummy! Yummy! I use Equal to sweeten this - my husband is a diabetic. Just cook the pudding as directed without the sugar and add the Equal when you add the rum extract and nutmeg.
