  • Heat oven to 350°F.
  • Heat oil in large nonstick skillet on medium heat. Add eggplant, onions and garlic; cook 15 min. or until eggplant is very tender, stirring occasionally. Remove from heat. Stir in pasta sauce.
  • Mix ricotta, 1 cup mozzarella and 1/4 cup Parmesan until blended.
  • Layer 1/3 each of the noodles, cheese mixture and sauce in 13x9-inch baking dish sprayed with cooking spray; repeat layers twice. Top with remaining mozzarella and Parmesan.
  • Bake 40 to 45 min. or until heated through. Let stand 10 min. before cutting to serve.

Serving Suggestion

Serve with a mixed green salad and your favorite fruit.

Rated 5 out of 5 by from I used Paul Newman's Sockaroni spaghetti sauce to add to the eggplant. I used Paul Newman's Sockaroni spaghetti sauce to add to the eggplant. When spreading the sauce mixture over the cheese mixture, I also layered some of Paul Newman's Tomato & Basil spaghetti sauce. I also mixed 30 oz. of part skim ricotta with 1/2 c. parmesan and 3/4 c. mozzarella. I used my glass rectangular dish (larger than 9x13) and made 3 layers of noodles. Also used whole wheat lasagne noodles and 4 links (removed from casings) Italian turkey sausage cooked thoroughly and added to the sauce mixture. Use 1/2 c. chopped onion. My husband said this was the best lasagne I have ever made!!! 10/25/2009

Rated 4 out of 5 by from I made some substitutions to the recipe. I made some substitutions to the recipe. I used no boil lasagna noodles to save time. I used half of the eggplant and added chopped yellow squash, zucchini, and mushrooms. I used 15oz of ricotta vs 24 oz (3cups) and just added more parmesan to the top and it turned out fine. For more flavoring, I added a handful of chopped fresh parsley with the ricotta mixture.

It was excellent. Everyone raved, and I didn't have enough to share with my daughters. (I have 5). Next time, I will increase the recipe.

I made my own tomato sauce, and I added a double yolk egg, zucchini and thyme to the eggplant mix... It was delicious, I'm definetely doing this again =)
