  • Toss cilantro with onion and bacon; set aside. Mix chicken broth and milk in large nonstick skillet. Bring just to boil on medium-low heat.
  • Slip each egg into a different place in the hot broth mixture. Spoon broth mixture gently over eggs. Cover skillet. Cook 5 minutes or until the egg whites are opaque and yolks are no longer shiny.
  • Carefully remove eggs from the pan; place 1 in each of 6 small bowls. Pour 1/2 cup of the broth mixture over each egg. Sprinkle evenly with the cilantro mixture.

Special Equipment Needed

Keeping it Safe

Always serve egg-based dishes immediately after cooking to prevent bacterial growth. Be sure to cook until the eggs are completely set.

Keeping it Safe

Breaking eggs into a cup first lets you examine the egg's quality before adding it to a recipe or cooking it to eat as is. Once in awhile, eggs may have blood spots or are spoiled, recognizable by an off odor. In these cases, the egg should not be used.
