  • Heat oven to 350ºF.
  • Mix butter and graham crumbs; press onto bottom and up side of 9-inch pie plate.
  • Beat cream cheese, 1/2 cup sugar and vanilla in large bowl with mixer until well blended. Add eggs, 1 at a time, beating after each just until blended; pour into crust. Top with apples and nuts. Mix cinnamon and 3 Tbsp. sugar; sprinkle over cheesecake.
  • Bake 40 min. or until center is almost set. Cool completely. Refrigerate 3 hours.

How to Test Cheesecake Doneness

To avoid overbaking a cheesecake, check for doneness at the minimum baking time by gently shaking the pan. If the cheesecake is done, the edge should be slightly puffed and it will be set except for a small area in the center that will be soft and jiggly. Do not insert a knife into the center as this may cause the cheesecake to crack during cooling.

I feel graham cracker flavor is too strong and clashes with the flavors of the fillings. So I used a flour, sugar, butter "Crumble crust" as was used in the 50's and earlier years. It was fabulous. Rating the recipe 3 because of the crust.

I made this for a weekly work dessert dish, and they all loved it and wanted the recipe. I didnt have the almons slices so I used a little almond extract to shake the apples in, I also coated the apples in the cinnamon sugar instead of sprinkling on top. It was definately a hit!!!

Rated 5 out of 5 by from So delicious! So delicious! I make this for all our family and friend get togethers and now it's requested! I also drizzle carmel over the top of it. For a lighter cheesecake this can be made with splenda and neufatchel cheese and it still has great flavor!! A must try!
