  • Preheat oven to 350°F. Rinse chicken; pat dry with paper towel. Use the tip of a sharp knife to separate the chicken skin from the meat in the chicken breast and tops of the legs. Sprinkle chicken both inside and out with the pepper and salt. Place in 13x9-inch baking dish.
  • Grate the lemon; mix the peel with cream cheese and Italian seasoning. Use a small spoon or your fingers to carefully stuff the cream cheese mixture under the chicken skin, pushing the cream cheese mixture carefully toward the legs, being careful to not tear the skin.
  • Cut the lemon in half; squeeze both halves into small bowl. Add dressing; beat with wire wire whisk until well blended. Drizzle evenly over chicken. Place the squeezed lemon halves inside the chicken cavity. Insert an ovenproof meat thermometer into thickest part of 1 of the chicken's thighs.
  • Bake 1 hour 30 min. or until chicken is no longer pink in center (180°F), basting occasionally with the pan juices.

Serving Suggestion

Balance this special occasion entree with smart side dishes. For example, choose a mixed green salad and vegetable.

Substitute

Instead of the Italian seasoning, mix 1 tsp. each ground cumin, paprika and garlic powder with the cream cheese.

Keeping it Safe

Never allow cooked chicken to set at room temperature for more than 2 hours. If it is not eaten immediately, cooked chicken should be kept hot or refrigerated.

I used 1 Tsp. of ground pesto, 1 Tsp. of cajun seasonings and 1/2 Tsp. of cumin instead of the Italian Seasonings. I also add the Italian Dressing to the dry seasonings before stuffing the chicken and used a little bit of that mixture to coat the outside of the chicken and it was just fantastic!! Thank you so much Kraft Foods!! I'm going to make two of these chickens for Christmas!! :)

After reading the reviews prior to making it I decided to use about 1/2 of the cream cheese mixture, I used the paprika,Cumin, Garlic powder alternative, and I used Kraft's Extra Virgin Olive Oil Greek Dressing instead of the Zesty Italian. It was AMAZING! It was my first time roasting a whole chicken and this is now my boyfriend's FAVORITE dish. I agree with the other's it should be enjoyed completely in the first sitting.

I roasted the chicken breast side down for half the cooking time and then changed to breast up. I find the juices have a chance to permeate the entire bird and it stays moister. I also included white wine with the baste.Under the skin spinich is a good addition. When carved the bird is very pleasing to the eye. Angie

Most of my meals come out so so. I cooked this last night. I loved it, my son and boyfriend also loved it. The chicken was so juicy and tender I would definately cook this again. I am so happy my family enjoyed this. I also made mashed potatoes and corn on the cob. Thanks kraft for the great recipe.

Instead of using a whole chicken, I used chicken quarters for the guys, and made boneless chicken breasts for myself. Used the cream cheese mix to make stuffed breasts. It was all wonderful. Another meal my teenagers devoured! I added the vegetable stuffing bake as a side dish, (another recipe on the Kraft site) and we had a wonderful Sunday meal!

This was the first time I've roasted a chicken, and the recipe was so good that my boyfriend couldn't believe I'd never done it before. I substituted lime for lemon and added garlic and onion to the cream cheese mix. I also place a lime (instead of lemon) in the cavity of the chicken and included minced garlic and carrots (which I discarded after cooking). The taste was superb!

Now, I must admit that I didn't have any fresh lemons on hand so I used lemon juice, but the lemon wasn't the problem - it was the excessive amount of cream cheese and just an overall not very good flavor. It was a lot of work to make, and definitely not worth the effort.

My family loved it, my husband was so happy with it he told me i could make it everyday of the week. So yes i will absolutly make this again and again. Thanks so much!!
