Rated 4 out of 5 by from Really? Really? Been doing this since I was a kid. Found it much easier when I discovered Ro-Tel in the supermarket. Since I prefer mine to be spicier than most, I get the 2 lb. package and make a regular and hot dip using regular Ro Tel and the Hot Ro Tel. I also like to add some browned ground beef, mild or hot Italian sausage and for the hot dip, some fresh sliced and diced Jalapeno peppers! Use your imagination to enhance your snacking experience!!

Rated 5 out of 5 by from This recipe is so easy. This recipe is so easy. I have loved it from childhood. Over the years we have modified the recipe by adding other ingredients such as meat, but I have made a recent modification that I think is well worth trying. Try the can of brand name tomato/green chili combination with the 'chili fixin's' spices added. It may be a bit spicy for some so just add a little at a time. You won't be sorry you tried it. DELICIOUS!

I also add an 8 oz. brick of Philadelphia c.r.e.a.m. cheese, a 16 oz. bag of frozen chopped spinach (thawed, drained, excess water squeezed out), some chopped onion, and 1/2 cup of my favorite medium/hot salsa, and for an added kick, sometimes I add 8 slices of crispy, crumbled bacon. This makes the most fantastic spicy spinach queso dip EVER! Sorry about the dots in the word ***** but it keeps censoring it.

I use 32 oz. velveeta (any kind--we like the queso blanco), 2 cans of rotel (any variety) with the juice, and one can of cream of mushroom soup. The soup makes the whole dish come together and gives it that creamy texture. This is also delicious with taco seasoned ground beef stirred in. I look forward to trying it with spicy sausage next time I make it!

Rated 5 out of 5 by from Love it! Love it! I like mine a bit spicer. I use the 2 pound Velveeta and add three cans of Rotel because I like more substance with each bite. I use at least one can of the Mexican Rotel and drain the other two cans and hold back the juice until I see I need it. I could have used one more can for my liking. The cheese this last time was thicker when melted. Still love it however you fix it.

Rated 5 out of 5 by from Quick, easy, no mess recipe, that everyone loves. Quick, easy, no mess recipe, that everyone loves. You can adapt to make more spicy or even mild. Can use most any type of chip that will hold sauce. We like to put in crock pot with a large bag of corn chips and stick pretzels. All you need is small bowls (disposable, of course) and some spoons to get the very last little bit out of the bowl and you are all set. Veggies work too.

I use the Hot Rotel, add a pound of browned ground beef, a whole brick of Philly, and a bunch of chopped jalapenos (with juice) until it's hot enough for me. I can practically feel my arteries hardening with each bite, but OMG still the best queso ever.
