  • Cook pasta in large saucepan as directed on package, omitting salt.
  • Meanwhile, sprinkle chicken with pepper. Heat 1 Tbsp. oil in large nonstick skillet on medium heat. Add chicken; cook 5 to 7 min. on each side or until done (165ºF). Remove to plate; cover to keep warm. Add remaining oil to same skillet. Add squash; stir-fry 3 min. Add garlic; stir-fry 3 min. or until squash is crisp-tender.
  • Drain pasta, reserving 1/4 cup cooking water. Toss pasta with reserved water in same pan; place on large serving platter. Top with chicken, squash and remaining ingredients.

Substitute

Substitute an additional 3 zucchini for the yellow squash.

I added bite size fresh aspargus, 1 sliced mini red and yellow sweet peppers, 1/2 finely diced jalapeno pepper. I also used chicken broth in place of the pasta water and used whole wheat pasta. I grilled the chicken breat strips and shrimp that I had marinated. I think for a little more kick I may add red pepper flake or the whole jalapeno. Yummm!

I cooked the vegetables longer than suggested and seasoned them while cooking with a little extra seasoning. I also used chicken broth instead of the water from the noodles. To make it a little healthier I used whole wheat noodles and not even half the cheese it called for. I'll definitely make it again.

Rated 4 out of 5 by from This was good! This was good! I made a few changes based on other reviews. Added 1/2 red pepper and 1/2 sliced onion in addition to the squash and zucchini. Also added 1/2 cup pasta water and 4 oz. light cream cheese and subbed 1 tsp Italian seasoning for fresh basil. Also thickened sauce with a little corn starch slurry. Will certainly make again!

Rated 5 out of 5 by from Very refreshing meal! Very refreshing meal! I made a slight alfredo like sauce to go on it so that it wasn't dry. About a 1/2 stick of butter, 1 tsp of minced garlic, 1 cup of half & half, 1/4 cup of parmesan cheese, 2 tbsp cream cheese & some of the Italian blend cheese. It was a total success! The hubby liked it and we will be adding it to the rotataion.

I made this recipes for my two boys and my guy and they loved it! :) I did however use only 2 yellow squash and 2 zucchini and substituted the pasta water for chicken broth and added a bit of Alfredo sauce to it and it was a smash hit! I'm definitely putting this in my cookbook and making it again. :) it was delicious and healthy!!

I also added salt and pepper to the veggies while they were cooking because it was so bland, especially for picky eaters! I will make this dish again with the cooking cream and added salt where needed.
