  • Heat oil in large skillet on medium heat. Add onions and red peppers; cook and stir 3 min. Stir in corn and zucchini; cook and stir 5 min. or until all vegetables are crisp-tender. Remove from heat.
  • Stir in parsley, black pepper and 2 Tbsp. cheese.
  • Top with remaining cheese.

Substitute

Substitute fresh basil for the parsley.

    Superb, but I substituted bacon drippings for the olive oil. Fry the bacon, set aside, then crumble bacon into dish.

    Found this rec. on another sight using just corn, but I had a small Asian eggplant to be used. Sautéed crushed garlic, Diced color pepper & onion 2 min, added strips of the peeled eggplant, sautéed another 4 - 5 min, added the corn for 2 min. OUT OF THIS WORLD. 2nd time just the corn. We keep small containers of diced onion, peppers & celery on hand to speed cooking.
