  • Heat oil in large skillet on medium heat. Add onions and red peppers; cook and stir 3 min. Stir in corn and zucchini; cook and stir 5 min. or until all vegetables are crisp-tender. Remove from heat.
  • Stir in parsley, black pepper and 2 Tbsp. cheese.
  • Top with remaining cheese.

Substitute

Substitute fresh basil for the parsley.

However, to coordinate with the meal I was preparing, the second time I made it, I added some garlic with the onion/pepper and at the end, added basil instead of parsley. It was awesome!

It was a great way to use up some of the veggies we had on hand. The trick is to cut the veggies in thin slices/small pieces so that they will cook in similar amounts of time.
