I tired this for the first time and I loved it. Here are a couple of tips though, if you are cooking fish for the first time like I did, make sure your tilapia is a thin cut (the middle will be on the raw side because the outside cooks so fast and starts to fall apart). The thinner slices I cooked turned out better. As the picture shows, does not include the pesto sauce,I felt like a TBSP was a little to much, you could use less and it would still be perfect.
I used flounder and sundried tomato salad dressing. The grape tomatoes made everything come together.
Everything a weeknight dinner should be and more. Delicious, fast, and attractive.
