  • Cook onions in dressing in skillet on medium heat 8 to 10 min. or until golden brown, stirring frequently. Cool slightly.
  • Heat oven to 375°F. Mix meat, stuffing mix, water, egg whites, 1/4 cup ketchup and onions just until blended; shape into 10x5-inch loaf in 13x9-inch baking dish sprayed with cooking spray. Cover with remaining ketchup.
  • Bake 55 min. to 1 hour or until done (160°F). Sprinkle with cheese; bake 2 min. or until melted.

Makeover - How We Did It

We've made over this traditional entrée and cut more than half the fat by using extra-lean ground beef, and egg whites instead of whole eggs. As a result, this saves 80 calories and 9g of fat, including 2.5g of sat fat, per serving.

Special Extra

Prepare meatloaf as directed; cool, then slice. Wrap individual portions in foil. Label, date and place in freezer-weight resealable plastic bags. When ready to serve, unwrap and microwave until heated through (160°F).

Rated 5 out of 5 by from I love this meatloaf. I love this meatloaf. It makes a lot, so we generally cut the recipe in half. We also pat it out flat (about 1-1.5" thick), lay some fresh spinach and shredded mozzarella on it, and roll it up like a jellyroll for a stuffed meatloaf. Delicious!

Rated 5 out of 5 by from I LOVE this recipe! I LOVE this recipe! So easy and tastes great. I bake it on a broiler-type pan so whatever fat is in the 93% ground beef I use drains off. And when I have it, I put a couple of slices of pre-cooked bacon on the top towards the end, under the cheese. (I do, however, use 1 whole egg instead of just the egg whites not being a egg white lover.) Onions smell so good sauteing in the dressing, too. Great for leftovers too -- warm meatloaf sandwiches. Yummm!!!!

Recently I have started doing WW and I have been really wanting meatloaf, but not willing to give up the points. I just calculated this recipe and it's only 7 PP per serving! That is awesome! I have made this several times and this will be the only meatloaf recipe I will ever use again. It's moist, flavorful and even my two picky boys devour it. The only thing I change is add a little mustard and brown sugar to the ketchup that I spread on top. So yummy!

Rated 1 out of 5 by from Disappointed in taste of meat loaf Made this meat loaf yesterday and did not like the taste. Ate slice for lunch and was disappointed that it did not taste like meatloaf. Stuffing mix changed meat flavor. Will substitute saltines for stuffing mix in future.

Instead of chopping up a large onion, I wiped my tears and opened an envelope of Lipton onion soup, increased water to 1 1/2 c and used three whole eggs. Delicious! Sandwiches next day were superb!
