Save 90 calories and 15g of fat, including 7g of saturated fat, per serving by preparing with extra-lean ground beef, 2% Milk VELVEETA, BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream and fat-free flour tortillas.
Assemble enchiladas as directed; refrigerate up to 24 hours. Bake, uncovered, in 350ºF oven 25 to 30 min. or until enchiladas are heated through and VELVEETA is melted. Top as directed.
For added color and texture, serve with a mixed green salad tossed with your favorite KRAFT Lite Dressing.

The Fiesta Chicken Enchiladas made over is much better. In the future I will use that recipe as a base, and just swap in beef for chicken when I need a change. I was not impressed with this recipe.
This was really pretty good as a base recipe. I added onion & taco seasoning to my hamburger. I already have some other additions in mind for the next time I make this!
