These cheesy beef and black bean enchiladas are so easy to make it seems silly to have a how-to video. But we did enjoy eating the results afterwards!

  • Heat oven to 350ºF.
  • Brown meat in large skillet; drain. Stir in half the VELVEETA and 1/2 cup salsa; cook 5 min. or until VELVEETA is completely melted and mixture is well blended, stirring frequently. Stir in beans.
  • Spoon 1/4 cup meat mixture down center of each tortilla; roll up. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
  • Bake 10 min.; top with remaining VELVEETA and salsa. Bake 20 min. or until enchiladas are heated through and VELVEETA is melted. Top with sour cream and cilantro.

Rated 4 out of 5 by from 4 stars only because I have to save 5 stars for the most incredible recipes ever, but this was super... 4 stars only because I have to save 5 stars for the most incredible recipes ever, but this was super easy, quick to put together and very good! The only thing I changed was to use the entire can of black beans which I would do again. I wasn't sure about the velvetta but it was very good, perfectly melted and creamy. I would definately make this again.

I found that it lacks flawor the velveeta cheese is to light and the whole plate is a little to dry, it would be better to use shredded chedar chesse instead and cover the enchiladas with a nice tomato sauce

I found it bland as well and only tried it because it looked easier than my recipe and actually this is a burrito not an enchilada recipe, because "authentic" enchiladas are always made with corn tortillas.

Rated 2 out of 5 by from The Fiesta Chicken Enchiladas made over is much better. The Fiesta Chicken Enchiladas made over is much better. In the future I will use that recipe as a base, and just swap in beef for chicken when I need a change. I was not impressed with this recipe.
