  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 5 to 7 min. or until chicken is no longer pink, stirring frequently.
  • Add Macaroni, water, salsa and cumin; mix well. Bring to boil; cover. Simmer on medium-low heat 10 min. or until most the water is absorbed.
  • Stir beans and Cheese Sauce into macaroni mixture; cook 2 to 3 min. or until heated through, stirring occasionally. Sprinkle with onions. Serve topped with sour cream.

It is a bit heavy but great for a family that doesn't mind the spice especially on a cold winter night when the family is really hungry. If I make it again I will use 1/2 the salsa it calls for and subsitute water to make up the difference.

Rated 4 out of 5 by from i would definitely recommend this recipe to anyone who enjoys spicy food. i would definitely recommend this recipe to anyone who enjoys spicy food. i liked it, but its something that i will probably only cook once in a while..a simpler way to make this recipe is to cook the mac & cheese by itself, cook the chicken, and then mix everything together--the salsa, etc..

I used ground beef (ground chicken never seems appetizing to me) I added 1 pkg. taco seasoning instead of the cumin and added 1 cup of sour cream to the final mixture. Wow! I will definitely be making this again! Thank you so much for this delicious concoction.

Everyone loved it except my 4 year old. He doesn't like much. My 9 year old who is very picky about dinners loved this meal. I will definitely make it again.

Very good and easy to make, but it would be better to make the mac and cheese separately and add it in last. Add the black beans earlier on, or else they are not very done. Will make again. My family really liked it, and it was very easy.

Rated 4 out of 5 by from we really enjoyed this meal. we really enjoyed this meal. i added corn to it, so that my picky eater would try it. I also made cheese quesadillas so I could stretch the meal. this meal feeds more than the suggested 6 servings. So I would deffinitly make this one again.

Rated 5 out of 5 by from YUM! YUM! We make this one a lot. I like to add the black beans in step 2, right after reducing the heat, so they can simmer, too. Otherwise they can be a little crunchy. I also mix in the green onion, rather than sprinkling on top. Delish!

Rated 4 out of 5 by from better than i thought it would be--hubby liked it because it has the macaroni--i chopped the onions... better than i thought it would be--hubby liked it because it has the macaroni--i chopped the onions in and heated them up at the end--i also added a bit of mexi-cheese when i put on the dollop of sour cream
