Makeover - How We Did It

This better-for-you alternative can save you 110 calories and 11g of fat, including 8g of sat fat per serving when compared with the traditional recipe. We did it by preparing it with PHILADELPHIA Neufchatel Cheese and KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese, and decreased the amounts used for both.

Special Extra

Garnish each serving with 1 Tbsp. chopped fresh cilantro.

Prepare using corn tortillas. To prevent cracking, warm tortillas as directed on package before filling and baking as directed.

Ratings & Reviews

Rated 5 out of 5 by from Delicious and Customizable This is an absolutely delicious recipe. While not using a traditional enchilada sauce or corn tortillas, the combination of the salsa and cream cheese for the filling and salsa and shredded cheese on top work very well to provide a great flavor. I could not find the Neufchatel cheese in my local grocery store, so used reduced fat cream cheese instead. The level of spice can be easily varied by using a hotter or milder salsa since there is quite a bit of it in the recipe - I think next time I'll add some diced jalapeno to my 'side' of the pan for a bit more spiciness.

Rated 5 out of 5 by from This recipe was amazing! This recipe was amazing! As a way to keep in touch because we all have busy lives, my girlfriends and I get together for a girls night once a month. We made this recipe and the talking stopped. All we wanted to do was eat. The only thing we did differently was spread the salsa out over the whole dish instead of just down the middle and covered with a layer of the mexican style cheese! We're from Wisconsin so bring on the cheese! I definitely recommend this dish!

Rated 4 out of 5 by from This dish was great and very easy to make! This dish was great and very easy to make! It was full of flavor! The only things I did different was that I cooked the chicken in the crock pot with seasonings the second time I made this. The shredded chicken from the crock pot turned out so much better! I also used a can of green chillis and used a can of rotel in replace of the salsa in the mixture and then used some salsa on top! I highly recommend cooking the chicken in the crock pot first!

Rated 5 out of 5 by from I made this recipe with minor adjustments. I made this recipe with minor adjustments. Used a salsa on hand and added a small can of tomato sauce to make it more like the thich and chunky style. I also added additional seasoning, like garlic. My husband is very picky and he enjoyed it. I asked him if we would want me to make this again and got a hearty YES!

Rated 5 out of 5 by from very fast and easy, especially b/c I used precooked chicken. very fast and easy, especially b/c I used precooked chicken. also, I added the santa fe philly cream cheese for cooking instead of the neufchatel cheese and it was extra creamy and seasoned. I didn't think it needed the bell pepper since it had the salsa in it.

Rated 5 out of 5 by from SO good! SO good! I've made this several times and it's awesome! I used whole wheat tortillas the first time, then used corn tortillas for my gluten-free friend. Both turned out really good! This will continue to be one of my go-to recipes for dinner.
