  • Heat oven to 375°F.
  • Mix all ingredients except 1/4 cup salsa and cheese.
  • Shape into oval loaf in 13x9-inch baking dish; top with remaining salsa.
  • Bake 1 hour or until done (160ºF). Top with cheese; bake 5 min. or until melted.

Fiesta Meatballs

Increase salsa to 1-1/4 cups. Mix meat mixture as directed; shape into 48 meatballs. Cook, in batches, in large skillet on medium heat 12 min. or until evenly browned and done (160°F), turning frequently. Spoon onto platter; top with remaining salsa and cheese.

Special Extra

Prepare meatloaf as directed; cool, then slice. Wrap individual portions in foil. Label, date and place in freezer-weight resealable plastic bags. When ready to serve, unwrap and microwave until heated through (160°F).

The stuffing mix makes all the difference and now they beg me to make meatloaf. It is so simple even my 19 year old makes it (she is away at college) I have even made it into meatballs and baked them. Thanks for this sight and the great magazines - I have your magazine sent straight to my daughter at college and she is becoming very domestic. When she comes home she is always excited to cook us something she has tried :o)

Rated 4 out of 5 by from I didn't feel the chilli powder gave it enough flavor. I didn't feel the chilli powder gave it enough flavor. Next time I am going to try adding an envelope of taco or fajita seasoning. You can never have enough cheese, so I added some in the mix. I think I'm going to add more next time. I'm also going to add more salsa to the mix (chunky) I really loved the flavor it gave when I came to a bite with a chunk of tomato. All in all I really liked the recipe, it gave me a starting point to be more creative.

I just added a little sauage to it and little seasoning like beeb and then I chage of where the cheese went I put a layer of the mixture down and then I sprinkled the cheese on that and then I put the rest of the mixture over the cheese. and I put a chopped bell pepper in the mixture and I omitted the chle pepper.And everybody loved it my husband and grandson said that was the best meatloaf I ever made. And my grandson don't like meatloaf.

I made it , but added 2 cups of stove tops stuffing, 1/2 cup homemade salsa to it instead of the kraft thick. Salt and pepper to taste, 1/2 cup of cheese inside and ontop. and 3/4 cup of water instead of a whole cup. Now my homemade salsa is spicey , and has hybanairo's peppers in it as well as jalepeno peppers and all the rest. So it came out very nice and spicey as well with all the onions, bellpeppers, so much better

Rated 5 out of 5 by from I was looking for a quick meatloaf recipe and stumbled onto this one. I was looking for a quick meatloaf recipe and stumbled onto this one. It was fabulous. I just put everything into the recipe, I didn't split up the salsa and cheese. I crush the stuffing mix a little also, before adding it to the recipe. I also slice it thinner then recommended. I live by myself so i freeze the leftovers. I made it for company and always get asked for the recipe.

After reading other comments I added salt to the meat mixture and didn't add the chili powder, but used a packet of taco seasoning instead to make it more "fiesta-like". I also used half the jar of salsa in the mix instead of just a 1/4 cup and poured the rest on top. My husband raved about it and I, the picky one, also loved it.

I didn't have quite enough salsa to top it, so I served each slice with a spoonful of drained Rotel. It also made a nice presentation. As a bonus, I used the liquid from the Rotel to add to spanish rice to serve with it and it was a hit! I will definately make this recipe again and again!!

My husband and I love spicy things so I added cheddar cheese with salsa in it, which gave it a little different flavor. Instead of the peas, I decided to use a mixed veggie package with broccoli, cauliflower, and carrots. The veggie package was microwavable which was quick.
