  • Add potatoes to large saucepan of boiling water; cook 15 to 18 min. or until tender. Drain; return potatoes to pan.
  • Use potato masher or back of large spoon to coarsely smash potatoes. Stir in dressing.
  • Stir in 3/4 cup cheese, onions and peppers just until blended. Top with remaining cheese and cilantro.

    I cooked the onions and peppers for 30 seconds in the potato water. Who would make regular mashed potatoes after tasting this?

    This is a fun way to brighten up regular mashed potatoes. I really enjoyed them and so did my family, including child!

    Had this at Easter. Unfortunately, I didn't have the green onions(used all up for the Blue Ribbon Layered Salad). Used sweet yellow onions instead. Turned out just as good in my opinion. The potatoes were a hit!
