  • Place 1/2 cup coconut in each of 2 separate resealable plastic bags. Set remaining coconut aside. Add blue food coloring to coconut in one bag and red food coloring to coconut in second bag. Seal bags; shake until coconut is evenly tinted.
  • Frost cupcakes with COOL WHIP. Top with coconut, gently pressing coconut into COOL WHIP to secure.
  • Insert licorice into tops of cupcakes.

Special Extra

Divide COOL WHIP into thirds. Color one portion with 4 drops red food coloring and second portion with 4 drops blue food coloring. Leave remaining portion white. Spread onto cupcakes and continue as directed.

My daughter will love helping me with these! Also may put blue food coloring in the cake batter and use cream cheese frosting instead of cool whip since i have that on hand. I will be using a white cake batter, also have on hand, and like other comment made I will probably use coconut only white frosting if use at all.

So we modified the recipe slightly by tinting the icing (red/white/blue colors) and used red twizzlers. We will definitely keep repeating this adapted version because of its ease and excited reception with all mouths involved.

This recipe is very versatile and can be used for other holidays such as halloween and christmas by using familiar holiday colors for the coconut and can garnish with another type of treat!
