Flower Power Cupcakes

What You Need

pkg. (2-layer size) white cake mix

cup boiling water

pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin

tub (8 oz.) COOL WHIP Whipped Topping, thawed

Few drops food coloring, any color

JET-PUFFED Marshmallows

JET-PUFFED Miniature Marshmallows

Make It

PREPARE cake batter and bake as directed on package for 24 cupcakes; cool completely in pan. Pierce cupcakes with wooden skewer or large fork at 1/4-inch intervals.

ADD boiling water to gelatin mix; stir 2 min. until completely dissolved. Spoon over cupcakes, adding about 2 tsp. to each. Refrigerate 3 hours.

TINT COOL WHIP with food coloring; spread onto cupcakes.

CUT each large marshmallow crosswise into 5 pieces with kitchen shears. Arrange 5 on top of each cupcake to resemble flower. Place 1 miniature marshmallow in center of each. Sprinkle with sugar.

Prepare cake batter and bake in 13x9-inch pan as directed on package. Cool cake in pan 15 min. Poke holes in cake and continue as directed.

Substitute

Prepare using your favorite flavor of cake mix and/or JELL-O Gelatin.

Substitute multi-colored sprinkles for the colored sugar.

I have made these at least 7 times now. They are so easy have have such a bang for your buck feel. I use green icing on the cupcake or green sprinkles if I am in a hurry. I have done several different color combinations but my favorite is red for Christmas. SUPER EASY.

I made these for my daughter's 6th birthday (at school & at home)using full size cupcakes and they turned out great!! I used a cut mini marshmallow for the center one time and then just piped yellow frosting in the center the next time (which I liked better). I also made mini cupcakes using mini marshmallows for her dance recital. They turned out really cute. We made them using many different pastel colors. Little time consuming, but well worth it when you see the big smiles on the kids faces!!

I made these with my mom and they were pretty easy over all. I made them for my family's Easter party this year. We were pretty confused about making the flower on the top with the marshmallows. For anyone who is having trouble, to make the petals all you have to do is cut off a layer of the large marshmallow at a time (long ways, not like in pieces over the top which was what I originally tried). It's best to make the cupcakes large so you can fit all of the marshmallows on top. I also put a jelly-bean in the middle just to very it up a little. All and all it was a great dessert that I would defiantly do again.

I made these for a fashion show fundraiser. The were great and sold out quickly. I used the large size cupcake cups and a buttercream frosting. I left out the gelatin to save time. I also used different colored sugars on the petals. Will definitely make again for Easter!

This is an easy and festive cupcake recipe. As a teacher, I have made it several times to as treats for my class. I have made it with and without the Jello being added and both are delicious. When cutting the marshmallows, it is helpful to have hot water nearby to make cutting easier.

I used my own cake & frosting recipe, but the flower decorations were great! If you spray the scissors with Pam first, it helps a lot. I used pink marshmallows and white icing, and didn't need sprinkles. Simple and cute!

loved these cupcakes. I was worried about how the petals would look, but the scissors really shape them as they cut. came out great!

I made this recipe last June for my "Welcome Baby" party. I didn't add the jello, instead I just made white cupcakes, frosted them w/ white butter cream, and made the marshmallow flowers. It was a huge hit at the party. A lot of people asked me where I bought them, and when I told them I made them, they were in amazement that I made them! (Not because they don't have faith in my decorating abilities, but that they were so professional looking.) It was a little time consuming, but it was worth it. :)
