  • Beat cream cheese and marshmallow creme in large bowl with mixer until blended.
  • Add COOL WHIP; beat on low speed just until blended.

Fluffy Lemon Frosting

Grate 1 Tbsp. zest and squeeze 2 Tbsp. juice from 1 lemon. Beat cream cheese, marshmallow creme and lemon juice in large bowl with mixer until blended. Add COOL WHIP and lemon zest; beat on low speed just until blended.

Fluffy Chocolate Frosting

Melt 3 oz. BAKER'S Semi-Sweet Chocolate as directed on package; cool 10 min. Beat cream cheese, marshmallow creme and chocolate in large bowl with mixer until blended. Add COOL WHIP; beat on low speed just until blended.

Fluffy Toasted Coconut Frosting

Toast 1/2 cup BAKER'S ANGEL FLAKE Coconut. Prepare frosting as directed; gently stir in coconut.

Note

Recipe makes enough to fill and frost 2 (8- or 9-inch) cake layers.

Rated 5 out of 5 by from I made this icing for my Easter bunny Easter cake. I made this icing for my Easter bunny Easter cake. It tastes amazing, like marshmallow. Due to the amount of cool whip used, it does tend to deflate so you need to work somewhat quickly. I added food coloring and although the colors worked well and were vibrant, the extra mixing deflated the amount that I started with. I feared it would not pipe well but proved it could and the shapes held. I will use this recipe again.

Rated 5 out of 5 by from Perfect and tasty This is delicious and works great for cupcake frosting, but also deliciously doubles as a fruit dip---yum! I've also incorporated additional ingredients for different color and flavor. I melt an ounce or two of white chocolate, milk or dark chocolate and mix it in for extra flavor. Also if you really want a rich flavor incorporate flavored cream cheeses, like caramel or honey pecan. Delicious and simple!
