  • Heat oven to 400°F.
  • Mix rice and 3 cups water; spoon onto centers of 6 large sheets heavy-duty foil. Top with chicken and vegetables. Mix peanut butter, barbecue sauce, soy sauce and remaining water; drizzle over vegetables.
  • Fold foil to make 6 packets; place on rimmed baking sheet.
  • Bake 30 to 35 min. or until chicken is done (165°F). Let stand 5 min. Cut slits in foil to release steam before opening packets.

Cooking Know-How

If the chicken breasts in your market are larger than 4 oz. each, they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear (165°F).

How to Safely Handle Raw Chicken

Always wash hands, preparation surfaces and utensils in hot, soapy water before and after contact with raw chicken. Dry hands and surfaces with a clean towel or paper towels. Take special care in washing worn cutting boards as there may be hard-to-clean grooves or cracks that can collect bacteria.

My guess regarding the sodium content is that it comes from the soy sauce and BBQ sauce. As for the split between some finding it tasteless and some thinking it tasty - I can't imagine how chicken could be bland if you put honey mustard bbq sauce and peanut butter over it. I'd probably add some tobasco just to be sure and be generous with the sauce.

Just prepare as directed, then place the foil packets in a freezer bag and place in the freezer. When ready to prepare, thaw completely then bake! I improvised because I did not have the honey barbeque sauce. Instead I used garlic barbeque sauce and honey peanut butter. Tasty!

I don't cook much but found this recipe to be very easy to prepare, remove from the foil, and...it tasted fantastic! My husband and I both loved it. It also reheats well as I took it to work for lunch today. Delicious! Please give us more recipes as good as this one!

If I do make again, I will season and pan brown the chicken first. The sauces did not mix with the veggies or chicken at all. The rice was just sitting on the bottom of the chicken with no oriental flavor.

I love the peanut butter mixed with everything else, and it is SO easy to clean up that I wish I could make something like this every night.

I had high hopes for this recipe, especially after the other foil pack recipe I tried was so good. I don't know what happened--it was like the flavors didn't marry very well. Even my husband, who will eat almost anything, wouldn't eat this.
