  • Heat oven to 400ºF.
  • Combine stuffing mix, tomatoes and garlic just until stuffing mix is moistened.
  • Place 1 chicken breast on center of each of 6 large sheets heavy-duty foil sprayed with cooking spray; sprinkle with basil. Top with stuffing mixture and cheese. Fold foil to make 6 packets. Place in single layer on rimmed baking sheet.
  • Bake 30 to 35 min. or until chicken is done (165ºF). Cut slits in foil to release steam before carefully opening packets.

Substitute

No heavy-duty foil on hand? Just use double-layer sheets of regular foil instead.

Rated 5 out of 5 by from I thought this was amazing. I thought this was amazing. The stuffing (i bought lower sodium) was not too mushy like others stated. I also used the diced tomatoes with the already added flavor - i think mine was garlic and onion. I did NOT drain the tomatoes and added a pinch of wateer when i was mixing the stuffing and tomatoes together. Everyone was a fan of it at my house - i have picky boys and they LOVED it! I brought the leftovers to work - everyone enjoyed them. Love that the cleanup was easy and it was portion controlled. I did not need anything additional for a "side" etc. I will definately add this to my list of "make again".

Rated 5 out of 5 by from DELICIOUS. DELICIOUS. I swapped out frozen home fries for the stuffing, added some salt and pepper to the mix, and left out the basil. Delicious. Definitely a new favorite.

Rated 4 out of 5 by from I made this recipe last night..... I made this recipe last night..... if you cut the chicken into bite size pieces and then layer in a pan.... it cooks up real well and the chicken is not dry. I found it to be a very good and quick dinner for a Monday night.
