My family really likes this recipe. I make it a ********* by putting it in a 9x13 baking pan, and baking for an hour. Instead of water I substitute chicken broth, which makes the rice flavorful. We make this about 2x a month now!
Excellent flavor, easy & quick prep, and makes for great leftovers!! Few dishes to clean. This is going in the rotation.
I read many of the other comments which was helpful. We marinated chicken for just an hour, sprayed the foil, mixed white & brown rice with chicken broth (rather than water), added canned diced tomatoes, and went heavier on artichokes.
Leftovers the next day were just as good or better than first night. I added a little mozzarella cheese at the end of heating & that was very good.
