  • Heat oven to 400°F.
  • Mix rice and water; spoon onto centers of 6 large sheets heavy-duty foil. Top with chicken, artichokes and tomatoes; drizzle with combined dressing and pesto.
  • Bring up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1-inch pan.
  • Bake 30 to 35 min. or until chicken is done (165°F). Remove packets from oven; let stand 5 min. Cut slits in foil to release steam before opening.

Cooking Know-How

If the chicken breasts in your market are larger than 4 oz., they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear.

How to Safely Handle Raw Chicken

Always wash hands, preparation surfaces and utensils in hot, soapy water before and after contact with raw chicken. Dry hands and surfaces with a clean towel or paper towels. Take special care in washing worn cutting boards as there may be hard-to-clean grooves or cracks that can collect bacteria.

This is going in the rotation. I read many of the other comments which was helpful. We marinated chicken for just an hour, sprayed the foil, mixed white & brown rice with chicken broth (rather than water), added canned diced tomatoes, and went heavier on artichokes. Leftovers the next day were just as good or better than first night. I added a little mozzarella cheese at the end of heating & that was very good.

The only thing I did differently was used cherry tomatoes and cooked it in a baking pan covered with foil, instead of individual foil packets. Instead of rice made cous cous separately as the side dish. Next time the side will be orzo there are endless possibilities. Family loved it! Thanks again for this wonderful, easy, delicious dinner!!!!

Rated 5 out of 5 by from My family really likes this recipe. My family really likes this recipe. I make it a ********* by putting it in a 9x13 baking pan, and baking for an hour. Instead of water I substitute chicken broth, which makes the rice flavorful. We make this about 2x a month now!

Instead of making 6 foil packs I turned it into a casserole, the problem with that is it took an hour to cook, yummy. The next time I make it I will add a little salt to the rice and water mixture

Rated 5 out of 5 by from I have made this many times and everyone I've made it for has loved it. I have made this many times and everyone I've made it for has loved it. I marinate the chicken in the pesto dressing and the tomatoes and artichokes seperately so there is more flavor . Delicious!

Rated 4 out of 5 by from Usually a serving size is for one individual so the serving size for this recipe would be one packet and the recipe would indicate with the title how many servings the dish would serve. If the amount of carbs is for one serving (not six), it seems like a lot of carbs, but I suspect most of the carbs come from the rice. If you leave out the rice, you would save a lot of carbs. Thank you for what reads as a delicious and easy recipe to prepare. I will have to try it some time. (difficult to rate since I haven't tried it yet)

Despite not liking the artichokes, I thought the different flavors were kind of weird together....the pesto, the dressing, the artichoke flavor. Personally, if I were to make this again I would only use 1 or 2 artichokes in the packet for some flavoring and the pesto. I would omit the dressing all together.

I will make it ahead and put the water in shortly before grilling. I make mine on the grill instead of the oven. Love it!
