I used instant brown rice. I heated the water in the microwave. I mixed the rice, water, and taco seasoning in a bowl and let it sit while I sliced the peppers and measured the other ingredients. I followed the rest of the instructions as written. The chicken needed more flavor. Next time I will rub some additional taco seasoning on the chicken. My husband and I liked it. I will make this again.
