  • Heat oven to 400ºF.
  • Fold up all sides of each of 4 large sheets heavy-duty foil to form 1-inch rim; spray with cooking spray. Combine rice, hot water and taco seasoning mix; spoon evenly onto foil. Top with remaining ingredients.
  • Bring up foil sides; fold to make 4 packets. Place on rimmed baking sheet.
  • Bake 30 to 35 min. or until chicken is done (165ºF). Cool 5 min. Cut slits in foil to release steam before carefully opening packets.

After reading other reviews, I decided to change this recipe up a bit & found that it worked very well. I lightly seasoned the chicken w/some of the taco seasoning & then used the rest of the packet for the rice. I also put a little salt on the chicken. I put all the ingredients into a casserole dish rather than make the foil packets. I added onions along w/the peppers. I cooked everything for 40 minutes & thought it turned out well. Next time I will probably double the amount of peppers & onions & add some beans

Rated 4 out of 5 by from I made this last night for dinner, it was very good! I made this last night for dinner, it was very good! It's definitely a keeper! I actually prepared it the day before and ended up going out for dinner so cooked it the next night and it turned out great. I used much more than 1 Tbsp of taco seasoning (about 3 in the rice & tossed 1 with the chicken). I also added an onion and cooked for 45 minutes. Also, I cut the chicken into strips. Took a little more then 10 minutes to prepare... maybe I'm a slow veggie cutter! I gave it only 4 out of 5 stars because of the changes that I made.

I've had this recipe for a while and it's so quick and easy, I do most of the prep work in the AM, adjust seasonings, after work spend 5 mins finishing it up then pop it in the oven. I double the amount of everything, substitute chicken broth for the water and use large breast halves and increase cooking time to 1 hour. As written the serving size is a bit skimpy for our tastes.

It's quick and easy to throw together.I even let my 4 year old do most of the work.(minus handing the raw chicken) I added sweet onions to part of the dish because I love onions but the rest of my family doesn't. So easy to customize. The only thing I did different was instead of making individual packs, I lined a casserole dish with non stick aluminum foil and put all the ingredients in it and made one giant foil packet. This method worked great and presented a beautiful dish when I uncovered it. I also took some other reviewers advice and used a whole packet of taco seasoning. It tasted great. Topped with salsa and sour cream and served with sweet organic corn. Can't wait to make this dish again in a few weeks.

I used a packet of 'Spanish rice' instead of white rice...I put in the packet and the 2cups boiling water it called for into a foil pan, sprayed with Pam. I added 4 chicken breasts, one sliced green paper, and 1/4 cup salsa...baked for 40min. Amazing!! My 5yr and 9yr sons loved it and they do NOT like tomatoes or spicy things!! It was NOT spicy and soooo flavorful! Super easy and will be made again very soon!

I was thinking you were supposed to make 4 individual packets...but the rice mixture didn't divide easily into fourths - at least not when you're trying to be sure to get the right amount of liquid in each packet to keep the rice from burning. I guess I need to fiddle a bit or find a little more guidance...

I made this for dinner on Sunday, and I can say without a doubt that it was the BEST Kraft recipe I've ever cooked! Everything came out perfect and my son and I loved it!!!! I'm going to fix it again and put a twist on it. Instead of using individual foil packs I'm going to do one big foil pack, slice the chicken breasts slightly, and add a little more taco seasoning, salsa and cheese. This is definitely a keeper.

Rated 4 out of 5 by from I used instant brown rice. I used instant brown rice. I heated the water in the microwave. I mixed the rice, water, and taco seasoning in a bowl and let it sit while I sliced the peppers and measured the other ingredients. I followed the rest of the instructions as written. The chicken needed more flavor. Next time I will rub some additional taco seasoning on the chicken. My husband and I liked it. I will make this again.
