  • Heat oven to 400°F.
  • Mix rice and water; spoon onto centers of 6 large sheets heavy-duty foil. Top with chicken, artichokes and tomatoes; drizzle with combined dressing and pesto.
  • Bring up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1-inch pan.
  • Bake 30 to 35 min. or until chicken is done (165°F). Remove packets from oven; let stand 5 min. Cut slits in foil to release steam before opening.

Cooking Know-How

If the chicken breasts in your market are larger than 4 oz., they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear.

How to Safely Handle Raw Chicken

Always wash hands, preparation surfaces and utensils in hot, soapy water before and after contact with raw chicken. Dry hands and surfaces with a clean towel or paper towels. Take special care in washing worn cutting boards as there may be hard-to-clean grooves or cracks that can collect bacteria.

I mixed the rice with the 2 1/3 water but added 2/3cup itlian dressing and salt to taste plus dried chopped garlic. I used sweet onion canned diced tomatos instead of fresh and since I didn't have regular pesto I used knorr pesto sauce and added extra artichokes. This dish turned out GREAT. I will definitly make it again and probably continue to use the pesto sauce. I find the use of foil packets a bit wasteful and kind of a pain so I will do the same just in a cassarole dish and cover it next time. This would make a lovely dish to serve to guests.

This is going in the rotation. I read many of the other comments which was helpful. We marinated chicken for just an hour, sprayed the foil, mixed white & brown rice with chicken broth (rather than water), added canned diced tomatoes, and went heavier on artichokes. Leftovers the next day were just as good or better than first night. I added a little mozzarella cheese at the end of heating & that was very good.

I made this recipe for the first time over the weekend and automatically doubled the artichokes because my husband loves them. It was a good move, because otherwise, it would have been a packet of just chicken and rice! I also doubled the sauce but felt the packets still needed even more seasoning. And the rice -- wow! That was a whole LOT of rice! Next time, I will stick with doubling all the veggies (artichokes and tomatoes). I'm going to triple the sauce and reduce the rice by about a third. Overall, it's a good, easy recipe, but just needs a little tweaking.

Rated 5 out of 5 by from Thank you thank you thank you! Thank you thank you thank you!! I needed a new recipe. This was simple and so tasty and just delicious!!! The only thing I did differently was used cherry tomatoes and cooked it in a baking pan covered with foil, instead of individual foil packets. Instead of rice made cous cous separately as the side dish. Next time the side will be orzo there are endless possibilities. Family loved it! Thanks again for this wonderful, easy, delicious dinner!!!!

Rated 5 out of 5 by from My family really likes this recipe. My family really likes this recipe. I make it a ********* by putting it in a 9x13 baking pan, and baking for an hour. Instead of water I substitute chicken broth, which makes the rice flavorful. We make this about 2x a month now!

Rated 5 out of 5 by from I have made this many times and everyone I've made it for has loved it. I have made this many times and everyone I've made it for has loved it. I marinate the chicken in the pesto dressing and the tomatoes and artichokes seperately so there is more flavor . Delicious!

Instead of making 6 foil packs I turned it into a casserole, the problem with that is it took an hour to cook, yummy. The next time I make it I will add a little salt to the rice and water mixture

Rated 2 out of 5 by from I think my husband and I both realized with this recipe that we don't like artichokes. I think my husband and I both realized with this recipe that we don't like artichokes. Despite not liking the artichokes, I thought the different flavors were kind of weird together....the pesto, the dressing, the artichoke flavor. Personally, if I were to make this again I would only use 1 or 2 artichokes in the packet for some flavoring and the pesto. I would omit the dressing all together.
