  • Heat oven to 375ºF.
  • Spoon 1/2 cup rice onto center of each of 2 large sheets of heavy-duty foil with sides slightly turned up. Pour 1/2 cup warm water over each mound of rice; top with 1 fish piece. Arrange spinach around fish; drizzle with dressing.
  • Bring up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside. Place in single layer in shallow pan.
  • Bake 15 min. Cut slits in foil to release steam before opening packets; top with cheese.

Substitute

Prepare using any flaky white fish.

Note

If you don't have heavy-duty foil, you can use double-layer sheets of regular foil instead.

I'm not too familiar with making fish, so I was a little skeptical with the preparation of this. I gave it a shot and it was delicious! The fish was cooked perfectly. I did use chicken broth instead of water like someone suggested which added to the flavor. I also had larger halibut fillets, so I cooked it for 30min. Since they were larger, I also added more dressing. My husband and I really enjoyed this meal. It was so easy too - I will definitely make again!

I would suggest not chopping up the baby spinach leaves and adding a little extra dressing over the fish and spinach. I also used tried with 2 differnt kind of fish fillets. I would also recommend cooking for 20-25 mins. I normally make 3-4 servings, it's so easy and so good!

My husband was eating his dinner roll with jam as always and said the flavor of the sweet jam and the salad dressing was very good and I tried it. It was better but maybe a bit of Honey/mustard spread on fish before baking would do it. We also added more dressing after we first tried it too.

Rated 4 out of 5 by from This was so easy to make. This was so easy to make. I made it for one, using a little more than 1/2 lb of haddock. It did take closer to 25 minutes to cook but it was worth the wait. Fish was moist and rice was cooked perfectly. I will definately make this again.

Rated 5 out of 5 by from This was great and super easy to make! This was great and super easy to make!! I threw in some mushrooms and zuchini as well and it all turned out delicious! Try it with other dressings as well- the flavor totally changes but you still get a quick healthy meal.

Left my husband speechless (a hard task) because he was so impressed! Next time I will use a little less water per pack as there was a lot left after cooking.

Only changes were to add 1 teaspoon minced onion on top of rice, double tomato dressing and add minimal amounts of salt & pepper. So easy and healthy!

Rated 3 out of 5 by from My boyfriend really liked this recipe. My boyfriend really liked this recipe. I added more dressing to give it a little bit more flavor, and used microwaveable rice instead of cooking it in the pack. I would definitely make this recipe again.
