  • Heat oven to 400°F.
  • Sprinkle chicken with seasoning mix. Place 1/2 cup potatoes on center of each of 4 large sheets heavy-duty foil sprayed with cooking spray; top with chicken, cheese and salsa.
  • Fold foil to make 4 packets; place in single layer on rimmed baking sheet.
  • Bake 30 to 35 min. or until chicken is done (165°F). Cut slits in foil to release steam before carefully opening packets. Serve chicken topped with sour cream.

They are easy, I can prepare ahead and use for lunches. I store them in refrigerator after baking when I prepare for my lunch, I unwrap foil and place in microwavable bowl. SO EASY!! I'm on weight watchers, I can figure my points so easy from the nutritional information provided with the recipe. I loved the foil-pack chicken & broccoli Dinner too. I appreciate you sharing these on-line Kraft! THANK YOU AGAIN!!!

HE LOVED IT! ... asked me to make more so he could take it to school for lunch. (to which I said 'next time' LOL). Only thing I would do different next time would be add more potatoes because they do stick to the foil so you lose a bit .. maybe make a separate packet with potatoes, salsa and cheese without the chicken to have extra potatoes. All in all, we'll be having this meal frequently! Thanks Kraft!

Rated 4 out of 5 by from This recipe worked well for our family. This recipe worked well for our family. I used 2 large russett potatoes total, sliced about 1/8" thick. I tried pre-cooking one in the micro & the other I didn't, but it turned out the didn't need to be pre-cooked. I didn't stack my potatoe slices on top of each other but instead layed them next to each other on the foil (which I sprayed with oil first). When I folded up the foil some of the potatoes wrapped around the chicken. I only used 1 tsp. of taco seasoning between the four chicken breasts (they were smaller sized). I made sure to sprinkle some of the salsa on the potatoes as well as the chicken. While they cooked I opened a can of black beans & put them in a pot over the stove vent. By the time dinner was done the beans were perfectly warmed. Add a green salad & it's a well-rounded meal!

Rated 5 out of 5 by from i personally do not eat meat. i personally do not eat meat. i made this for my boyfriend and he LOVED it. he said he was nervous about the salsa (he doesn't like it at all) but he didn't even notice. i meant to add black beans and forgot to. i plan to next time. i cooked it for twice as long as it called for, the chicken i used was 8 oz. he wants me to make it again! it was easy. i made sure to cut the potatoes THIN because people had complained they were not cooked throughly. he said it was perfect.

I cooked the packets for a total of 40 minutes, and while the chicken was done, the potatoes were not even close. I sliced them as thin as I could and followed all the directions. I'm not sure what happened to cause this. Even if I used a little more potato than called for, not even those on the bottom were done. Hope you have a suggestion, Kraft, because I'd like to try it again! Thanks!

We had a huge group of people to cook for and this chicken made it possible to customize depending on the individual likes and dislike of the guests. We baked all the packets ahead of time and kept them warm in a turkey roaster and they were moist, juicy, and delicious. These can easily be adapted as a campfire recipe by wrapping in extra foil. All 23 people that attended our event loved them and that is including a couple very picky eaters and children!

I feed 2 grown men, a 5-year-old boy, and myself every night, and this is one of the easiest recipes I have found so far. My 5-year-old absolutely loved it, as well as my husband and roommate. This is also the first time that 4 chicken breasts fed us all so it was wonderful. I tried to be easier and pair it with chips and salsa (I know, healthy) but nobody was even hungry after devouring the chicken and potatoes. I will definitely make again, by request!

They did not eat the potatoes, though (my husband didn't like those either), but they liked the chicken. I didn't have Mexican cheese and used shredded cheddar and I definitely think the Mexican cheese (or pepper jack) would have been better. The chicken was very juicy and the clean up was so easy!!! The sour cream on top REALLY makes it taste good! We'll make this again!!

Rated 5 out of 5 by from This was so good! This was so good! My whole family loved it! Imagine the smile on my face when my toughest critic was the first one to say OH man, this is great mom! I did two things different, and it turned out really perfect. I smeared a real thin layer of butter on the foil before I put the potatoes down. And I also sliced some onions and put them on top of the chicken, before I put the salsa and cheese. They turned out soft and caramelized. Delicious!

First I sprayed the foil with non-stick spray, used chopped red potatoes that I seasoned with fajita seasoning and a sprinkle of cheese, then I added sliced chicken breast, more cheese and added more medium salsa than called for. I cooked them for about 50 minutes and it was all perfectly cooked. It did have a little more juice than pictured but it even that was yummy!

The chicken did not dry out in the oven and was very moist because of the salsa. I live by myself and I cooked extra to take to work with me for my lunches. The meal tasted just as good as when I pulled it out of the oven. I did however do it without the potatoes because I did not have any at the time. Next time I make it I will probably have black beans and rice as a side dish.

If you follow the recipe, and slice the potatoes very thin, they will cook in the recommended time. The only thing I did different was to use my own, homemade taco seasoning and I generously sprinkled both sides of the chicken before placing it in the packet. This one's definately a keeper though, the whole family loved it!

I made it a little easier by substituting about 3/4 cup frozen hash browns per each packet instead of the sliced potatoes. It worked perfectly and the packets were cooked perfect after 25 minutes! We will definitely be making these again and perhaps use pasta sauce with mozzarella for another version of the recipe!

I baked it for 40 minutes just to be sure everything was done, and sprayed some Pam on the foil as suggested. The flavors were fantasic! I used a chunky medium salsa since they don't sell Taco Bell salsa here. My little sister-in-law even liked it and she's a very picky eater!!! :)

I shook both the chicken and potato slices in a zip lock bag full of taco seasoning. I also happened to use chicken breast tenders (two in each pack). I added green chiles to the top along with the salsa. I baked the packets at 400 for 30 minutes - everything tasted great.

This turned out very good and very easy to make- I did have to cook it a bit longer but I, too, think it was due to the potatoes (My fam likes lots) LOL All in all I think the only thing I would change or "Add" to this is to put the meal in Taco Salad shells with a bed of shredded lettuce and diced tomatoes to serve- It seemed to just need a good "crunch" as you ate it- Easy to do though!

Rated 5 out of 5 by from this was sooo good! this was sooo good! the only thing i did different was i used pre-sliced chicken tenderloins. each packet had 2 pieces, and cooked fairly quick. the potatoes by far were my favorite part. yes the packets were a bit on the "juicy" side but if you put all the stuff onto a plate its not a big deal. plus i think the juicyness helps to cook the potatoes better. so so good. will make again.

I didn't have any taco seasoning on hand, so I sprinkled the chicken with a little chili powder, cumin, onion salt and garlic powder. Delicious! Beware that there will be a lot of juice in the foil packet, so you will want to serve the chicken and potatoes on their own plate and whatever you serve as a sidedish on a different plate.

However, the potatoes were not a very good taste match and they were not done all they way through. I read the comments before I made it and even cooked it longer than instructed, and they still weren't done. Take my word for it....make it with rice instead and you'll have yourself an excellent meal!

My husband is not a fan of salsa, so I didn't put any on his chicken and it came out just as good! I also loved the potatoes as a side dish right in our foil packet! I would definately make this super easy dish again, plus it's so convienent to clean up for those busy weekdays!

For those that had problems: 25 minutes is long enough to cook this recipe even for a big chicken breast if you have a good working stove, maybe adjust for higher elevations. Preheat for 10 minutes and use cheap foil not the heavy duty stuff. Sliced red potatoes work great, I used two medium ones for each package. Any taco seasoning and chunky salsa will be good.

Several people have asked me for the recipe, tried it, and loved it. It can be prepared ahead of time and kept in the refrigerator until time to bake but be sure add a few minutes to the bake time when if you do this.

My entire family loved the recipe. I also e-mailed it to a friend that loves to go camping as I thought this would be a great meal to cook over an open fire. It was a great alternative to crock pot recipies for "on-the-go" nights. The second time I made this, I actually assembled the whole thing in the morning, and then put them in the fridge. I cooked them for an additional 10 minutes since they were cold, but it worked great! Thanks!

We cooked the packets for 45 minutes (10 minutes past the suggested time) and the chicken was great, but the potatoes were no where near done. It would have been easier to make au gratin potatoes and separate seasoned salsa chicken! Also, it was too difficult to check for doneness before the meal was on the table!

Substituted fajita seasoning for the taco seasonings (idea came from a previous poster) and used spanish rice and corn w/ green and red peppers as the side dishes. My boyfriend LOVED it! He asked for it two days in a row. This recipe is juicy and full of flavor. Will be favorite in my recipe book for its ease of preparation, clean up, and great taste.

I used a whole pkg. (1.25 oz.) of taco seasoning mix. I sprinkled half on the potatoes and half on the chicken (put breasts in a plastic bag with seasoning and tossed). I used 4 breasts and put a half cup of salsa on each breast and put regular cheddar on top. I covered this with foil and baked for 1 hr. at 400 degrees. I had the baking dish oiled so the potatoes wouldn't stick. It turned out great! My husband agreed, the potatoes were still kinda bland. We put the sour cream on at the table and he also used salsa out of the jar on the side. I think next time I will put some sour cream and salsa with the taco seasoning under the breasts. I had about 1 potatoe left in the dish. We were all full. I will definitely make this again and do some more experimenting. Thanks for the great receipe and I am giving it to some of my friends.

The potatoes were not done but the chicken was excellent, nice and moist. I had to put the sliced potatoes in the microwave to continue cooking until they were done. Next time I would precook the potatoes. Spraying the foil does help. Lynn S.

For one who doesn't like the veggies in chunky salsa, I used taco sauce instead so he wouldn't have to deal with peppers and onions! It's great for those nights when you have a few stragglers to the dinner table -- the packets keep the food warm and moist.

Added more interesting flavor than just taco. Entire family liked it. Used a little less salsa for picky son & he snarfed it up. Also, I did cook for 45 minutes to make sure chicken was done - very tender.
