  • Heat oven to 400°F.
  • Combine water and rice; let stand 5 min. Spoon onto centers of 4 large sheets of heavy-duty foil;
  • Top with remaining ingredients.
  • Fold to make 4 packets; place on rimmed baking sheet. Bake 25 to 30 min. or until chicken is done (165°F). Cut slits in foil to release steam before opening each packet.

To prevent the rice from sticking to the foil, spray foil with cooking spray before using. Or, use nonstick foil.

If the chicken breasts in your market are larger than 1/4 lb. each, they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear (165°F).

Rated 5 out of 5 by from this is really good and really easy! this is really good and really easy! there were two problems i had the first time. one was that when i put the rice on the foil, the water kept leaking out of the sides (all the water doesn't get absorbed during the 5 minutes) when i tried to fold it up. i fixed this by getting a plate that is slightly rounded and making the packet on the plate instead of a flat surface. the second issue i had was the rice needed a bit more seasoning to our taste. i seasoned the rice with chili powder and cumin and also mixed some picante sauce with the ranch dressing and added a little more of that on top (the picante sauce makes the 'dressing' go farther and has less calories and fat).

Rated 5 out of 5 by from This was nummy. This was nummy. There are postings about how the chicken or rice or veggies were bland. There is enouch dressing, chili powder, and cheese to add some flavor to the dish, but the meal is one where you are supposed to be able to taste rice, chicken, and veggies, NOT ranch dressing and cheese--that's why it's one of Kraft's healthy recipes! I thought it was very good. The foil packets were great for keeping the chicken moist and steaming the veggies, and they also made it easy to clean up pans and plates because all you had to do was throw away the foil. These packets make great leftovers, too.

I make my rice ahead, just some boil in the bag type and I also custom make packets for those that do not eat rice I leave it out. I coat the chicken in a low fat/carb ranch and sprinkle with lots of chili powder, place on the rice in the packet. I then place red & yellow bell peppers with some frozen corn and then put a few dashes of Tabasco sauce all over the chicken and rice. This adds a KICK and really makes it a Southwestern dish with using corn and bell peppers in place of the broccoli. YUMMY!! Whole family loves it.

Rated 2 out of 5 by from I had never cooked rice in a foil packet meal. I had never cooked rice in a foil packet meal. I followed the directions regarding soaking the rice, but I didn't include the leftover water in the packets. Consequently, most of the rice was done, but not all. That handful of uncooked grains spoiled the whole meal for me. The chicken cooked in about 35 min., but the brocolli was overcooked. As many have said, it is a bland recipe, but can be doctored up if you make it again. It definitely has the potential to be a meal you make on a regular basis, but not as is.

Rated 2 out of 5 by from I had high hopes for this recipe as I liked all the ingredients in it, but ended up quite... I had high hopes for this recipe as I liked all the ingredients in it, but ended up quite disappointed! The recipe said to cook the packets for 30 minutes which i did, but when I opened the packets the chicken was VERY undercooked! We put them back in the oven for an additional 30 minutes and then everything came out cooked. The taste however was quite bland which surprised me. Needs a lot more seasoning!! Don't think I'll make this again.

Rated 2 out of 5 by from I followed the recipe exactly, and it was extremely bland. I followed the recipe exactly, and it was extremely bland. The rice and vegetables had no flavor whatsoever. And the amount of rice the recipe calls for could feed a small third world country. I would recommend marinating the chicken beforehand, using only 1/2 cup of rice per packet, seasoning the rice before baking, and using way more Ranch dressing than what is called for. We *might* try this again with a lot of tweaking, but I doubt it.

Rated 5 out of 5 by from this was my 1st foil pkt experience. this was my 1st foil pkt experience. i loved this recipe so much i passed it out in my office. i did make a few alterations which i feel obligated to share. i marinated my chicken in buttermilk for 24 hours before making this meal. be sure to rinse the chicken. i also added garlic salt and fresh ground pepper when adding the chili powder. i did use the recommended veggies plus white onion. wow, is all i can say!! thank you so much.
