  • Heat oven to 375ºF.
  • Cook pasta as directed on package, omitting salt. Meanwhile, cook spinach as directed on package; drain well. Place in large bowl. Add cream cheese; stir until melted. Stir in cottage cheese and eggs.
  • Drain pasta. Add to spinach mixture with the mozzarella; mix lightly.
  • Spoon into 8- or 9-inch square baking dish; top with Parmesan.
  • Bake 25 min. or until heated through.

    I also put in cubed ham one time bacon another and I thought next time I make it I might go with chorizo. My family loves it.

    I am a southern girl so I always season things if it is called for or not. It was good. It came out a little dry so I'll add some milk next time but will make it again. I used low carb noodles so we wouldn't feel so guilty.
